The corner of 100 West and Williams Way has undergone quite a transformation recently as the Hoodoo Moab, Curio Collection by Hilton—billed as Moab’s first four diamond-rated hotel—has neared completion, landscaping has gone in, and the Josie Wyatt’s Grille housed within the Hoodoo has opened for business.

Jay Elowsky, founder of Pasta Jay’s, is also behind Josie Wyatt’s Grille, which opened on Aug. 6.

Named after his children—and paying homage to Josephine and Wyatt Earp of western lore—Josie Wyatt's Grille offers a “new dining experience,” according to the restaurant’s website.

“I want to make world-worthy food and tantalize our guests into trying some new and more unique foods”, said Executive Chef Bob Gilbertson.

Gilbertson said he relished the chance to once again work with Elowsky after having worked at Pasta Jay's some 20 years before.

“It was a great chance to work with Jay again and to come back to Moab,” Gilbertson said.

The dishes use choice steak cuts from the Double R Ranch in the Pacific Northwest—such as the Double R Prime Dry Aged Baseball Cut, the Double R Prime New York, and the 28-ounce Reserve Tomahawk Chop— as well as locally grown produce.

There are salads, like the Little Gem Caesar; iceberg wedge; and salt roasted beets with arugula, herbed goat cheese and agrumato oil.

Entrees includes roasted chicken with polenta, roasted cauliflower and chicken jus; the JW Burger with steak fries, bacon onion jam, bibb lettuce, tomato, white cheddar, truffle aioli and pretzel bun; and pan seared Idaho trout.

There are also soups, like lobster bisque and spiced lentil and chickpea, as well as a selection of homemade sides like garlic whipped Yukon Gold potatoes; baked mac ’n’ cheese; roasted Brussel sprouts with bacon; and creamed spinach with crispy shallots.

Everything is available to be enjoyed either inside or out on the main patio. Beverages may also be purchased from the bar.

Marketing Director Erica Council says that the goal is “to be the first of its kind,” housed within “a four diamond-rated hotel in downtown Moab.”
